Cinnamomum Verum (Ceylon cinnamon) is considered as the “true cinnamon” which is native to India and Sri Lanka, though it is also considered to be native to Myanmar. Ceylon cinnamon is a small evergreen tree whose bark is commonly used as a spice. It is known to have a lot of medicinal properties. It has traditionally been used as a herbal medicine for the treatment of various ailments and their symptoms related to the respiratory tract, digestive tract, and gynaecology. This ancient spice is as well famous for its antineoplastic activity which significantly reduces the abnormal growth of malignant cells and the formation of blood vessels in tumours. Cinnamon may also keep you away from coronary heart disease as it slightly increases the good kind of cholesterol and decreases the bad cholesterol levels and triglycerides, which is a type of fat. Apart from this, cinnamon, which has many proven and unproven medicinal properties, is said to be effective against neurodegenerative disorders such as Alzheimer’s and Parkinson’s disease. Three years after planting, the bushy evergreen Ceylon cinnamon tree is ready for the first harvest. Even though the branches and the entire tree were cut down during the harvest, later new shoots sprouted from it and will continue producing well for 40-50 years. The first laborious task is to scrupulously scrap off its outer bark as it contains the bitter-tasting “coumarin”. Then, soften the stripped stem by rubbing it with a brass bar to extract the inner bark as precisely as possible because the quality of cinnamon sticks relies on this. Big pieces of inner bark are set out in the sun to dry, and then those peels roll up one into another filled with smaller pieces, forming the long cinnamon quills which will be dried again under the shade for several days. We cut the 100% dried bark into pieces and packed and export it very carefully without any compromise in quality.
